This vibrant microlot comes from Los Lajones, one of two farms owned by Graciano Cruz, a specialty coffee farmer known for championing high quality produced with minimal natural resources. Graciano was one of the first in Central America to advocate for zero water use in processing and has dedicated his work to natural and honey methods that both protect the environment and enhance flavour.

Los Lajones sits between two lava flows, creating a unique microclimate with rich biodiversity, from native birds to fungi and flowering trees. These conditions, combined with Graciano’s approach, help shape the expressive character of this lot.

Processed using the natural anaerobic method, carefully selected cherries are fermented without oxygen before being slowly dried. This brings depth, sweetness and clarity to the cup.
